Method:
Pan-Fried Dill & Garlic Barramundi with Steamed Vegetables
  1. Place barramundi fillets on a plate. Combine Gourmet Garden Dill, Garlic and Parsley in a bowl. Brush herb mixture over one side of fish.
  2. Heat olive oil in a large frying pan. Cook fish herb side down for 2 minutes. Turn, cook for 2 to 3 minutes or until just cooked through.
  3. Meanwhile, boil or steam broccolini, asparagus, butter beans and red capsicum. Toss vegetables in extra virgin olive oil and lemon juice. Season with salt and pepper.
  4. Divide vegetables among serving plates. Top with fish. Serve with lime or lemon wedges.

I used fresh parsley, fresh dill and fresh coriander and steamed some broccoli to which I added olive oil. It was excellent!
Barramundi turned out lovely

Barramundi turned out lovely although took a minimum of 20 minutes to cook. Didn't cook the veggies as we were having other side dishes. The whole family enjoyed the fish. Thanks for the recipe.
