Teriyaki Snapper
Ingredients
300g fresh fish fillet
4 tbsn Japanese shoyu/soy sauce (available from Chef's Armoury)
4 tbsn mirin (available from Chef's Armoury)
vegetable oil
Method
Preheat your cast iron pan on medium heat
Add vegetable oil
Place fish in pan with the skin side down until about one quarter cooked (1 - 3 minutes) depending on the fish
Turn the fish over and cook until a further quarter cooked
Add mirin and reduce liquid until caramelized
Add shoyu and turn off heat
Turn fish a few times to coat the surface with sauce
Serve immediately
Tips & Hints
For best results use a high quality cast iron pan, Serve with a simple salad of rocket, tomato and ginger dressing.
