Crispy Skin Duck Breast
Ingredients
2 duck breasts
Salt
Method
Take 2 duck breasts out of the fridge
Add salt to the skin and score duck breast skin with a sharp knife
Let rest out of fridge for 20-30 minutes to come to room temp
Remove moisture from surface of duck with a paper towel
Put skin side down on a low to medium heat cast iron pan
After about 8-10 mins you should be able to see most of the fat has rendered away from the skin
Increase heat a little and after 2-4 minutes you should notice a golden brown colour on the skin
Turn duck breasts over skin side up. Cook for 3-5 minutes until caramelized
Turn pan off and let cook in the pan's residual heat for 3-5 minutes
Drain on paper towel
Wrap in foil for a few minutes to rest
Serve with your favourite vegetables
Tips & Hints
For best results use a high quality cast iron pan such as Oigen or Naked Pan cast iron cookware.
