3 slices of bread, soaked in warm water (squeeze out excess water)
2 eggs
1/2 cup finely chopped parsley
Salt and pepper
Method
Preheat oven to 200°C on fan forced function
Combine sausage mince, vegetables, bread and spices
Cut sheets of puff pastry in half
Roll sausage mixture into a sausage shape (smaller than the puff pastry size)
Place the sausage mixture (lengthways) in the middle of the puff pastry sheet
Brush pastry edges with beaten eggs, then roll so that the puff pastry encases the sausage mixture, you can also glaze the top of sausage roll with remaining beaten egg mixture
Cut into desired lengths
Line tray with baking paper and space sausage rolls evenly on the tray
Bake for approximately 25 to 30 minutes or until golden brown
