Caramelised Onions

Caramelised Onions
Ingredients
3 x large brown onions cut in half and sliced
100mL vegetable oil
1 tbsn salt + extra to taste
2 tbsn balsamic vinegar
2 - 4 tbsn white sugar
Method
Put pan on medium heat
Add onions to cast iron pot with 50ml oil with 1 tablespoon of salt
Sweat onions down until translucent
When onions brown, reduce heat to low - medium and add 2 tbsn sugar, 50mL oil and 2 tbsn balsamic vinegar
Cook for 5 minutes and taste to test for more sugar and salt. Adjust accordingly
Cook on a low heats until a rich brown colour and well caramelized. This may take up to 45 minutes
Tips & Hints
Use a heavy cast iron pot as this will help with the caramelisation, Don't cook on too high a heat or you will end up with a burnt taste
