Baked Chipolatas & Balsamic Tomatoes
Ingredients
12 beef chipolatas
2 red onions cut into thin wedges
1 tablespoons olive oil
2 x 250g punnet cherry tomatoes, halved
1/4 cup balsamic vinegar
Basil leaves
Crusty bread to serve
Method
Preheat oven to 180°C on fan forced or fan assist cooking function
Combine sausages and onions with olive oil and place in a large baking dish
Season with salt and pepper
Bake for 15 minutes or until sausages are golden
Add cherry tomatoes and balsamic vinegar and toss gently through sausages
Cook for a further 15 minutes or until tomatoes have started to break down
Remove from oven, stir in basil leaves
Serve with crusty bread
