Hazelnut Praline

Hazelnut Praline
Ingredients
11/2 cups sugar
1/2 cup hazelnuts
1/3 cup water
Method
Preheat oven to 150°C using the traditional function
Place hazelnuts on baking tray and roast for 5 - 6 minutes
Then rub in a clean towel to remove husks
Chop roughly
Lightly grease a baking tray and line with baking paper
Spread hazelnuts on tray
Combine sugar and water in a heavy medium sized saucepan
Stir over low heat until sugar dissolves
Increase heat and boil without stirring until syrup turns golden
Swirl the praline mixture (for around 6-8 minutes), occasionally brushing down sides of pan with wet pastry brush
Remove from the heat and cool for 1 minute (until the bubbles disappear)
Carefully pour hot praline onto the baking tray
Cool until praline hardens
Break praline into pieces
