Light and creamy recipe is made for easy home entertaining. Blended with pantry staple white beans and the creaminess of ricotta, this dip is also great as a healthy appetiser recipe for entertaining.
Ingredients
400g can butter beans, drained and rinsed
250g tub Perfect Italiano Smooth & Creamy Ricotta
1 clove garlic, crushed
1 teaspoon grated lemon rind
1 tablespoon lemon juice
1 tablespoon olive oil
2 tablespoons fresh flat leaf parsley leaves
Salt and freshly ground black pepper, to taste
Extra virgin olive oil, for drizzling
Extra parsley leaves, for garnish
Method
Blend beans, Perfect Italiano Smooth & Creamy Ricotta, garlic, lemon rind, juice, oil, and parsley in a food processor until smooth. Season to taste
Pour dip into serving dish and refrigerate for at least one hour or overnight before serving
To serve, drizzle extra virgin olive oil over dip, sprinkle with parsley and black pepper
Tips & Hints
Dip is best prepared in advance and refrigerated. Serve with Black Olive, Rosemary, Mozzarella and Feta Pan Bread, or your favourite dipping bread.
