Ingredients
- 2 large sweet potatoes, peeled & cut into 2cm thick slices
- 1 tablespoon olive oil
- 1 clove garlic, crushed
- salt and freshly ground black pepper, to taste
- 2 tablespoons chopped flat leaf parsley
- 12 thick frenched lamb cutlets
- 250g Perfect Italiano Mozzarella, grated
- 24 semi dried tomatoes
- 12 large sage leaves
- 250g Perfect Italiano Parmesan, cut into thin slices
- 12 thin slices prosciutto
