Mini Bacon and Egg Filo Tarts

Mini Bacon and Egg Filo Tarts
Ingredients
6 rashers of bacon, roughly chopped
6 eggs
6 sheets of filo pastry
1/2 cup chives, chopped
1 tomato, diced
Olive oil spray
Method
Preheat oven to 180°C on fan forced function
Grease 6 muffin hole tin using Olive Oil spray and set aside
Heat a small frying pan on medium heat and fry the bacon until lightly brown. Remove from heat and stir in the chives and season with salt and pepper
Spray (with Olive Oil spray) a sheet of filo pastry and fold into half crossways
Spray the top of the sheet (with Olive Oil spray) evenly again and fold into half again (crossways) - repeat again
Insert the pastry squares into the muffin mould allowing the sides to overhang. Repeat with the rest of the pastry sheets
Divide the bacon mixture amongst the prepared filo pastry cases
Break an egg into a bowl then gently place into a case. Repeat with the rest of the eggs
Place in the middle of the oven for 20-25 minutes
Divide the tomato on top of each tart and serve
