Preheat oven 160°C and Lightly grease 4 x 1/2 cup ramekins
Place Vitasoy Soy Milky Vanilla and Vitasoy Soy Milky Lite and vanilla bean into saucepan and heat gently. Turn off heat just before the Vitasoy soy milks boil. Do not allow to boil
In a mixing bowl, beat the egg yolks, egg white, and sugar with electric beaters on medium-high speed until light and creamy. Add the hot Vitasoy Soy Milky mixture to the eggs, stirring well. Add the orange zest and stir well. Chill for at least 30 minutes in the fridge
Remove from fridge, and pour into prepared ramekins. Place ramekinds in a water bath (large baking tray 1/2 filled with water), and cook fo 30 minutes. Refrigerate for at least 4 hours (preferably overnight)
To serve, sprinkle the top of each ramekin with brown sugar. Use a propane burner and sear the brown sugar for a crispy topping
