Spicy Mexican Burger with Egg and Red Bean Salsa

Beef Burger Patty
Ingredients
400g lean beef mince
1 egg
1 small onion, finely diced
4 wholemeal pita breads(19ml)
1/2 cup bread crumbs
1 tsp ground chilli
1 tsp ground cumin
2 garlic cloves crushed
Method
Place beef mince into a bowl add egg, onion, bread crumbs, chilli, cumin, garlic, and mix well
Divide mixture into four equal amounts and form into patties and grill gently on a BBQ or pan fry until cooked
Red Bean Salsa
Ingredients
1 ripe tomato, diced
1/2 red onion, diced
1 x 400g tin red kidney beans, drained and rinsed
1/2 bunch fresh coriander, chopped
2 tbsp olive oil
Juice of half a lemon
Method
Combine tomato, onion, beans, coriander, olive oil and lemon juice in a bowl and mix well. Set aside
To Assemble
Ingredients
1 tbsp olive oil
4 eggs
Salt and pepper
4 small Pita breads
4 Green oak lettuce leaves
Method
Heat oil in a frying pan and cook egg to your liking. Season with salt and pepper
Place pita breads on to plates, top with lettuce, beef patty, bean salsa and fried egg. Serve immediately
