These grilled mushrooms stuffed with eggs are a low-carb recipe idea that's ideal for breakfast or lunch.
Ingredients
8 large field mushrooms
1-2 tbsp olive oil
Salt and pepper to taste
8 eggs
1 bunch chives, chopped
Method
Clean mushrooms and carefully remove the stalk from the centre
Drizzle olive oil over mushrooms and season with salt and pepper. Place onto a preheated hot barbecue plate and cook for 2 minutes.
Crack eggs into the mushroom cups, close the lid of the barbecue and cook for 2 - 3 minutes or until eggs are cooked to your liking
Season to taste and top with chopped chives. Serve immediately
Tips & Hints
If your barbecue does not have a lid, cover the mushrooms with an upside down oven dish or aluminium foil roasting tray
