Vegetable Medley Stir Fry

Vegetable Medley
Ingredients
2 tablespoons (40mL) vegetable oil
1/2 medium red onion, thinly sliced
1/2 long red chilli, halved, seeds removed, then thinly sliced
1 medium carrot, cut into thin match sticks
1 yellow capsicum, seeded, and cut into thick strips
100g broccoli, separated into small florets
100g sugar snap peas
2 sticks celery
Coriander leaves, to garnish
Method
Make the Stir Fry Sauce first
Heat oil in a wok or large fry pan over medium-high heat
Add onion and chilli and cook for about 30 seconds
Add the vegetables and stir fry for about 2 minutes
Stir in sauce and cook just long enough to heat the sauce
Top with coriander
Serve at the table in the wok for people to help themselves
Tips & Hints
Substitute any vegetable in season. Do not overcook the vegetables, they are meant to be crunchy.
Stir Fry Sauce
Ingredients
85mL Kikkoman Naturally Brewed Soy Sauce
Juice half lemon
2 cloves garlic, crushed
50g ginger, finely grated
Pinch sugar (to taste)
Method
To make the sauce, combine all ingredients in a bowl and set aside
Tips & Hints
Kikkoman Sweet Chilli, Ginger & Soy Marinade & Sauce can be substituted for our regular Soy Sauce if desired
