Love Heart Corn and Cheddar Fritters
Ingredients
- 1 2/3 cups plain flour
- 1/3 cup cornflour
- 1 teaspoon baking powder
- Salt and white pepper, to taste
- 2 eggs
- 1 cup milk
- 2 cups canned sweet corn kernels, drained
- 1/2 cup grated cheddar cheese
- 3 spring onions, finely sliced
- Olive oil, for cooking
- 3 ripe tomatoes, chopped
- 1 ripe avocado, chopped
- 1 spring onion, chopped, extra
- 1/4 cup picked parsley leaves
- 1 tablespoon extra virgin olive oil
- 200g sour cream or natural yoghurt, for serving
