Spatchcock
Ingredients
1 pack Game Farm deboned spatchcock (300 - 350g)
1 teaspoon chilli powder
1/2 teaspoon dried oregano
1/8 teaspoon ground cinnamon
1 clove garlic, crushed
2 tablespoons lemon juice
Method
Thread each spatchcock onto a skewer
Combine the spices, garlic and lemon juice and brush generously over the spatchcock
Heat a grillpan or frypan over medium heat and cook the spatchcock for 5 minutes on each side or until cooked through
Salsa
Ingredients
Chargrilled corn kernals
1 tomato, diced
1 small red onion, sliced
1 red chilli, finely chopped
Coriander leaves
Lime juice
Method
Combine salsa ingredients
To Serve
Ingredients
Tortillas
Guacamole
Shredded Lettuce
Method
Serve the spatchcock with salsa, tortilla, lettuce and guacamole
