Mini Chorizo Frittatas
Ingredients
12 slices thinly sliced gypsy ham
18 cherry tomatoes, halved
30g baby spinach leaves, roughly torn
1 chorizo sausage, thinly sliced and cooked untill crisp
250ml PHILADELPHIA Light Cream for Cooking
2 eggs
Black pepper, to taste
2 tablespoons chopped chives
Method
USE ham (1 slice per muffin pan) to line the base and sides of 12 x 1/3 cup capacity lightly greased non-stick muffin pans
DIVIDE the tomatoes, spinach and chorizo between muffin pans
WHISK the PHILLY, eggs, pepper and chives together then carefully pour into the muffin pans
BAKE in a moderate oven 180°C for 15-20 minutes or until set. Cool in pan for 5 minutes before serving
Tips & Hints
These mini frittatas make a perfect weekend breakfast treat too. Ensure that the ham slices are not broken or torn, otherwise use 2 slices per cup.
