Ingredients
600g chicken breast fillets
2 tbsp Gourmet Garden Moroccan Seasoning
1 tbsp olive oil
1 tbsp lemon rind, finely grated
3 tbsp lemon juice
8 bamboo skewers
1 1/3 cups cous cous
1 1/3 cups boiling water
125g cherry tomatoes, quarterered
2 spring onions, thinly sliced
1 cup watercress, chopped
80g toasted pine nuts
Method
Chop chicken breast fillets into 2cm cubes. Place in a bowl. Add Gourmet Garden Moroccan Seasoning, olive oil, lemon rind and 1 tbsp lemon juice. Toss to coat. Thread chicken onto bamboo skewers
Combine couscous with boiling water in large heatproof bowl, cover; stand about 5 minutes or until water is absorbed. Fluff couscous with a fork
Add 2 tbsp lemon juice, cherry tomatoes, spring onion, watercress and toasted pine nuts. Stir to combine
Heat a large non-stick frying pan over medium-high heat. Add skewers. Cook for 3 - 4 minutes each side or until cooked through. Serve with couscous
