Take one avocado, halve it and enjoy as an entree when my family comes for a special occasion meal.
Avocado with Black Olives
Ingredients
1 avocado
1/2 green capsicum, chopped
2 tbsp spring onion, chopped
6 black olives (stoned and shredded)
Method
Cook the chopped green pepper in boiling water for 1 minute then drain and rinse
Split avocado in half and remove stone. Fill each half with the vinaigrette dressing and chill slightly before serving
Vinaigrette Dressing
Ingredients
Ground black pepper
1 1/2 tbsp white wine vinegar
5 tbsp extra virgin olive oil
Squeeze of lemon
1 tsp caster sugar
1 tsp parsley (chopped)
Method
To make dressing, mix salt, pepper and vinegar and whisk in the oil. Add lemon juice and sugar. Add all other ingredients (except avocado) to the dressing
