Increase your daily vegetable count with this mouth-watering salad.
Vegetable Salad
Ingredients
100g baby green beans
200g cauliflower florets
10 baby carrots, peeled
1 bunch asparagus, trimmed
1 bunch broccolini, trimmed
2 tbsp olive oil
2 tsp Gourmet Garden Garlic
2 tsp fennel seeds
2 1/2 tbsp lemon juice
2 tsp Gourmet Garden Oregano
Salt & pepper to season
1/2 punnet cherry tomatoes, halved
Method
Boil or steam green beans, cauliflower florets, baby carrots, asparagus, and broccolini, separately, until just tender. Drain and refresh under cold water
Meanwhile, heat olive oil, Gourmet Garden Garlic and fennel seeds in a small pan. Cook for 1 minute or until fragrant
Remove pan from heat, stir in lemon juice, Gourmet Garden Oregano and season with salt and pepper
Arrange vegetables and cherry tomatoes on a serving platter, drizzle with dressing. Serve immediately
