Vietnamese Style Beef Noodle Soup
Ingredients
- 500g sirloin steak, trimmed
- 1 tablespoon oil
- 1 onion, thinly sliced
- 6 spring onions, white finely chopped, green tops thinly sliced and reserved
- 2 tablespoons grated ginger
- 2 cloves garlic, crushed
- 1 red chilli, cut in 1/2 lengthways
- 4 cups water
- 2 tablespoons VEGEMITE
- 1 tablespoon hoisin sauce
- 1 teaspoon brown sugar
- 4 whole star anise
- 1 cinnamon stick
- 250g flat Asian egg noodles
- Salt and freshly ground black pepper, to taste
- Mint leaves, torn
- 1 Lebanese cucumber, deseeded and thinly sliced
- Lime wedges
