Heat a large fry pan over medium heat. Add turkey mince and 2 Tbsp lemon juice, cook until brown, stirring to break up mince. Set aside
To make the dressing, combine olive oil, garlic, 2 tsp sumac and remaining lemon juice and zest
Preheat oven to 180°C (160°C fan forced). Cut Lebanese bread in half along the edges to make two rounds. Place onto baking tray and lightly spray with olive oil. Sprinkle 1 tsp sumac evenly over bread pieces. Bake for 3-4 minutes until crisp. Break bread into pieces
In a large bowl, combine remaining ingredients along with the mince and bread. Drizzle with the dressing and toss to coat
