Potato salad never tasted so good or exotic.... deliciously dressed with Zoosh.
Ingredients
600g chat potatoes, halved
1 bunch Dutch carrots, trimmed
1 tablespoon Moroccan seasoning
1-1/2 tablespoons olive oil
1/2 cup green olives
2 cups flat-leaf parsley leaves
1/2 cup ZOOSH It Must Be Love Creamy Potato with Classic Chives Dressing
12 small lamb fillets, trimmed
12 woody rosemary sprigs or bamboo skewers
Olive oil spray
Method
COMBINE the potatoes, carrots, seasoning and oil in a large bowl and toss to coat.
ARRANGE vegetables on 2 baking paper lined trays and bake in a hot oven 200°C for 30-35 minutes or until golden and cooked to your liking. Cool
COMBINE roasted vegetables, olives and parsley in a large bowl and drizzle over the dressing
THREAD a rosemary sprig through each lamb fillet and spray with oil. Cook on a BBQ plate or char grill until done to your liking. Serve immediately with salad
