This melting moments recipe is a great idea for any occasion. Filled with orange cream and raspberry jam, the melt-in-your-mouth biscuits are so easy to make and you can customise it to your favourite flavours.
Biscuits
Ingredients
125g (1/2 block) Fairy margarine, softened
75g (1/2 cup) icing sugar, sifted
1/2 teaspoon vanilla essence
75g (1/2 cup) corn flour, sifted
100g (2/3 cup) plain flour, sifted
Method
Preheat oven to 160°C. Line baking trays with baking paper
Cream Fairy, icing sugar and vanilla together until light and fluffy. Add corn flour and flour and mix well
Roll heaped teaspoons of mixture into balls and place on the prepared trays. Flatten with the back of a fork to make an indent
Bake in oven for 10-12 mins until golden
Orange Cream
Ingredients
60g (1/4 block) Fairy margarine, softened
160g (1 cup) icing sugar, sifted
1 teaspoon grated orange rind
1/2 tablespoon orange juice
Method
Beat the Fairy until smooth. Gradually add icing sugar. Beat until light and creamy
Add the rind and juice and beat until combined
Assembly
Ingredients
Raspberry jam to serve
Icing sugar to dust
Method
Sandwich two biscuits together with the orange filling and some raspberry jam
