500g chicken breast fillet, cut into 1/2cm thick slices
2 tablespoons oil
1 clove garlic, crushed
1 teaspoon grated root ginger
Freshly ground black pepper, to taste
3/4 cup The Good Nut Crunchy Peanut Butter
250ml PHILADELPHIA Light Cream For Cooking
1/2 cup water
1 tablespoon soy sauce
1 teaspoon sambal oelek (chilli paste)
2 x 32cm precooked pizza bases
2 cups KRAFT Perfect Melt 3 Cheese Blend
1/2 cup thinly sliced fresh pineapple
1/2 cup roughly cut roasted red capsicum
4 spring onions, white part cut into 1-2cm pieces, green parts cut into 4-5cm pieces and reserved
Coriander leaves, for sprinkling
Method
COMBINE the chicken, oil, garlic, ginger and pepper in a bowl
HEAT the peanut butter, Philly, water, soy and chilli in a saucepan, stirring until mixture just begins to simmer, to make a sauce. Remove from heat
SPREAD each of the pizza bases with 1/3 cup of the sauce. Sprinkle with cheese, Top with pineapple, capsicum, chicken and white spring onion
BAKE the pizzas in a very hot oven 220°C for 15-20 minutes or until bases are golden and chicken is cooked. Drizzle with extra sauce and sprinkle with spring onion and coriander. Serve immediately
