This recipe uses the KitchenAid Cook Processor - an all in one appliance that can boil, fry, steam, stew, knead, chop, mince, puree, mix and stir, all at the touch of a button
Ingredients
2 tbsp white miso paste
1 tbsp mirin
1 tbsp olive oil
2 tsp caster sugar
2 tsp soy sauce
4 x 150g firm white fish fillets eg blue eye trevalla or snapper
1/2 red capsicum, shredded
8 snow peas, shredded
1 green shallot (spring onion), thinly sliced
Steamed brown rice, pickled ginger and wasabi to serve
Method
For best results, use the KitchenAid Cook Processor.
Mix the miso, mirin, oil, sugar and soy sauce in a bowl. Add fish and coat with the mixture. Cut 4 x 30cm squares of baking paper and place on work bench. Place fish and miso mixture in centre of sheets of paper. Top with capsicum, snow peas and green shallot. Wrap up to form four parcels
Remove lid of KitchenAid Cook Processor. Add 400ml water to the bowl. Place parcels in the lower Steamer Basket and place this on the bowl. Seal with the domed Steamer Lid. Select STEAM P1 and press Start to confirm
Place parcels on four plates and let each person open their parcel at the table. Serve with brown rice, pickled ginger and wasabi
Tips & Hints
Mirin is a type of Japanese rice wine used for cooking. Mirin and miso paste is available in many supermarkets and Asian food stores.
You can use shredded carrot and green beans instead of the capsicum and snow peas.
