Spicy Pear Sauce

Makes:
Two 300ml bottles
Ingredients
Lemon slices
1 teaspoon mustard seeds
1 cinnamon quill
750mls cider vinegar
1 cup water
250g brown sugar
5 cups peeled chopped pear
1 onion, roughly chopped
1/2 a small red capsicum
4 slices fresh ginger
3 cloves garlic
1 teaspoon smoked paprika
2 teaspoons salt
Method
Tie the lemon slices, mustard seeds and cinnamon in a muslin bag
Place the vinegar, water, brown sugar in a large pot and stir over heat to dissolve the sugar
Add all the other ingredients, reduce heat and simmer for 1 hour, stirring occasionally
Remove from the heat
Discard the muslin bag and then blend with a stab blender till smooth. Strain through a fine sieve
Pour into hot sterilized bottles and seal immediately
If using immediately the sauce will keep refrigerated in an airtight container up to 2 weeks
