Ingredients
1/2 cup chopped pumpkin, dry roasted
1/3 cup drained, canned chickpeas
15g baby spinach
2 thin slices red onion, cut into thin strips
20g reduced fat feta cheese
1 tablespoon ZOOSH Mighty Balsamic Splash Light Dressing
Method
PLACE all salad ingredients in a bowl and toss with dressing.
Serve immediately.
Tips & Hints
Leftover roast pumpkin is perfect for this recipe.
