Make a homemade roasted herb chicken for dinner and serve with oven baked vegetables or roast potatoes.
Ingredients
2kg Steggles Family Roast chicken
1 tblsp dried parsley
1 tblsp dried basil
1 tblsp dried oregano
1 1/2 cups fresh breadcrumbs
125g cherry tomatoes, cut in half
1 small onion, chopped
2 cloves garlic, crushed
1 tblsp olive oil
Method
Place one teaspoon of each dried herb, all the breadcrumbs and tomatoes in a bowl, mix well. Cook the onion in a lightly greased pan until softened, stir through breadcrumb mixture
Fill chicken cavity with stuffing, close with toothpicks or skewers. Tie drumsticks together and fold under wings. Combine remaining herbs, garlic and oil in a small bowl. Rub herb mixture all over the chicken
Place chicken on a roasting rack over a large baking dish. Bake in 190°C preheated oven for 1 hour and 45 minutes, or until cooked through. Serve with zucchini flowers
