PLACE the plums, cut side up, in a baking dish. Beat the PHILLY, sugar and vanilla with an electric mixer until smooth. Add the egg yolk and mix until just combined. Fold in the amaretti and spoon onto the cut sides of the plums
BEAT the egg whites and salt until soft peaks form. Continue beating, whilst gradually adding the extra sugar, until mixture is thick and glossy
PIPE or spoon meringue on top of plums and bake in a slow oven 140°C for 30-35 minutes or until surface of meringue is firm to touch. Allow to cool prior to serving
Tips & Hints
If amaretti (crisp Italian almond-flavoured biscuits) are unavailable, substitute with a coconut macaroon or a ginger biscuit.
