This vegetable mash recipe with zucchini and sweet potato is great as a toddler food recipe made from scratch.
Ingredients
2 teaspoons olive oil
350g Sweet Potato, peeled, chopped
1 potato (200g), peeled, chopped
1 small parsnip (120g), peeled, chopped
1 large zucchini (150g), chopped
100g small broccoli florets
Method
Heat oil in a medium saucepan on high. Add sweet potato, potato and parsnip. Cook, stirring for 2 minutes. Add 1/2 cup water. Bring to the boil and simmer, covered for 10 minutes
Add zucchini and broccoli. Stir well and simmer, covered for a further 10 minutes until vegetables are tender
