Combine all ingredients in a bowl, marinate lamb in fridge for 1-3 hours
Caramelised Onion & Pumpkin
Ingredients
1 small onion sliced
100g pumpkin finely sliced
butter
1 tablespoon olive oil
1 teaspoon brown sugar
splash balsamic vinegar
Method
Heat oil & butter in frying pan over medium heat.
Cook onion and pumpkin for 5 minutes until softened and caramelised.

Ingredients
Pizza base
Pizza tomato sauce
lamb
caramelised onion & pumpkin
pine nuts/cashews/postachio
greek yoghurt to serve
chopped coriander (optional)
Mozzerella cheese
Garlic confit
Method
Spread pizza sauce over base, place lamb, onions & pumpkin on pizza
Sprinkle with cheese, then sprinkle with pine nuts.
Cook pizza 10-15 minutes, and serve with yoghurt and coriander.
