Ingredients
4 x 250g chicken breasts
4 slices prosciutto
Sage leaves
1/3 cup shredded mozzarella
1 tablespoons olive oil
485g Chicken Tonight Honey Mustard Simmer Sauce
Method
Preheat oven 180°C
Flatten chicken with a meat mallet or rolling pin between two pieces of baking paper or cling-wrap, making sure thickness is the same for all pieces
Lay a piece of prosciutto on a chopping board, and top with few sage leaves. Place chicken on top of the prosciutto and sage lengthways. Sprinkle the mozzarella evenly between each piece of chicken, season and then roll up. Secure with a toothpick
Heat oil in a non-stick frypan over medium-high heat. Fry each piece of chicken turning, about 3 minutes each side, to lightly cook all over
Spread 3/4 of the Simmer Sauce onto the base of an ovenproof baking dish, add the cooked chicken, and pour the remaining sauce on top. Bake, covered with foil for 30 minutes, or until chicken is fully cooked
