Pomegranate Dressing
Ingredients
2 tablespoons Extra virgin olive oil
2 tablespoons pomegranate molasses
1 tablespoon apple cider vinegar
Method
Combine the salad dressing ingredients in a small bowl, whisk to combine. Set aside
White Peach Salad
Ingredients
3 ripe, firm White Peaches, stone removed and cut into wedges
120g goats cheese, crumbled
1 bunch watercress, removed from stem
1 head radicchio, leaves separated and washed
Micro herbs to garnish
Method
On a heated and oiled grill pan or medium high heat BBQ, grill peach wedges until lightly charred on both sides. Set aside
In a large bowl, combine all ingredients, except micro herbs. Add dressing
Plate salad onto a platter and sprinkle with micro herbs
