1 continental cucumber, halved, seeded and cut into thin slices
4 spring onions, cut into fine strips
1/2 cup Vietnamese mint leaves
1/2 cup shredded mint leaves
1/2 cup ZoOSh So Fabulous Kickin Coleslaw
1/2 cup roasted peanuts
Extra Vietnamese mint, for decoration
Method
Combine in a serving bowl the cabbage, capsicum, carrot, cucumber, spring onions, mint and dressing and toss lightly. Scatter over the peanuts and decorate with extra mint. Serve immediately
Tips & Hints
For added zing toss through some chopped fresh red or green chili.
