These easy avocado, mango and chilli prawn cups are a delicious entree or appetiser to enjoy on Christmas Day or for any dining occasion during the season when mangoes and seafood are at their best.
Ingredients
600g large cooked and peeled prawns
1/3 cup aioli
2 tsp lime zest
1 chilli, seed removed and finely chopped (plus extra)
1 tsp chives, finely chopped (plus extra)
1/2 small red onion, finely diced
1 small Lebanese cucumber, small dice
1/2 medium avocado, small dice
1/2 small mango, diced
2 baby cos lettuce, leaves removed
Method
Chop prawns into bit 1cm pieces and set aside
Combine all ingredients into a bowl and mix until combined. Add prawn pieces and toss. Season with salt and pepper to taste
Top individual cob lettuce leaves with prawn mix and garnish with extra chilli and chives
