Smoked Salmon on Avocado With Special Dressing

This Smoked Salmon appetiser is designed to get the conversation started around a relaxed Christmas table where guests can enjoy a glass of sparkling and make their own appetiser.
Smoked salmon base
Ingredients
200g packet smoked salmon (or trout)
1 long baguette
1 large or 2 small ripe avocados
Method
Arrange Salmon or Trout on large serving platter
Slice baguette into long, diagonal pieces and lightly toast then add to platter
Mash avocado in bowl, adding a little lemon juice to prevent browning. Place bowl with spoon on platter
Special Dressing
Ingredients
1/3 cup olive oil
3/4 cup lemon juice
1/2 small red onion, finely diced
1/2 cup fresh dill, finely chopped
1/2 tsp hot English mustard
2 tsp honey
Salt & Pepper to taste
Method
Place all ingredients in a screw top jar and shake to combine. Pour sauce into a vessel and add to platter
