Enjoy this sweet chilli noodle stir-fry with organic sauce, lean turkey mince and lots of vegetables. This is an easy, feel-good meal for any day of the week.
Ingredients
⅓ cup (80ml) Rosella Organic Sweet Chilli Sauce
3 tbsp light soy sauce
1 tbsp fish sauce
1 tbsp sesame oil
500g turkey mince
1 tbsp fresh ginger, finely shredded
1 large clove garlic, crushed
1 red capsicum, seeded and cut into strips
1 bunch asparagus, ends trimmed, cut into 5cm lengths
100g snow peas, trimmed and cut in half lengthways
450g Hokkien noodles, rinsed and drained
3 green onions, sliced
Coriander and sliced red chilli, to serve
Method
Combine sweet chilli sauce, soy sauce and fish sauce and mix well
Heat sesame oil in a wok over high heat. Add turkey mince and 2 tbsp of the sauce. Cook 5-8 minutes until mince becomes golden and crispy, breaking up the mince with a wooden spoon as it cooks
Add ginger and garlic and cook for 1 minute
Add capsicum, asparagus and snow peas. Stir-fry a further 2-3 minutes, or until vegetables have just softened
Pour in remaining sauce, noodles and green onion and stir-fry until mixed through. Serve immediately topped with coriander and sliced red chilli
