Method:
Apple & Cinnamon Fritters
- Slice the apples crossways into 1 cm thickness. Rub with lemon juice and set aside
- In a mixing bowl, place flour, bicarbonate soda, egg, 1 tablespoon of sugar and 120ml of cold water and mix until smooth. Set aside
- Heat oil in a heavy saucepan. (To test if oil is ready, place a piece of bread in the oil, if it turns golden in 30 seconds, then it is ready.)
- Dip each apple ring into batter, shake off excess and place gently into hot oil
- Cook for 2 minutes or until both sides are golden
- Remove and transfer to a plate lined with paper towel to drain excess oil
- Repeat until apple rings are finished
- Mix the rest of the sugar with cinnamon
- Toss the fritters in the cinnamon sugar until well coated
- Serve with ice cream
