  1. For best results, use Breville's Fast Slow Pro™ combination pressure and slow cooker
  2. Combine the salt, both peppers and both paprikas in a small bowl. Season the pork on all sides with the spice mix then add the pork to the cooking bowl. Combine the remaining ingredients and pour over the pork
  3. Select PRESSURE COOK CUSTOM 80kPa / 40 mins / Natural or SLOW COOK CASSEROLE
  4. When cooking has completed, carefully remove the pork to a large bowl and shred with two forks. Skim any fat from the surface of the sauce
  5. Select REDUCE and desired heat level. Cook until sauce thickens to desired consistency, about 5 minutes. Add pork back to sauce and stir well to combine
  6. Serve on rolls, topped with coleslaw, pickles, etc

Very quick and simple recipe that gives a great result. Pork always comes out soft and buttery and shreds very easily. Added a few more spices to the rub such as garlic powder, onion powder and cumin. You can add extra cayenne pepper or chili flakes if you like it spicier. If you have time, cut the pork, rub the spices in and leave it in the fridge overnight. 8-10 hours on low on the slow cook casserole function has given me the best result. After cooking, I’ve removed the pork and shredded, skimmed the fat from the cooking liquid and put the pork back into the liquid and reduced for a few minutes, giving a more intense flavour.

I made this recipe on the low slow cooker casserole setting and it was delicious! I added a whole brown onion diced and a red chili. It didn't take the minimum 9 hours, and i think 7-8 would have been plenty
