  1. SIFT together the flours spice and bicarb soda then return the husks to the flour. Stir the carrots currants and walnuts into the flour. Whisk together the sugar, eggs, oil and orange rind then pour into the flour. Mix briefly to combine. Spoon into a paper lined 28cm x 18cm slicepan
  2. BAKE in a moderate oven 170°C for 35-40 minutes or until cooked when tested Allow slice to cool on a wire rack for 15 minutes before turning out of pan to cool completely. Store in an airtight container until required
Philly Frosting
  1. BEAT together the PHILLY, icing sugar milk powder and lemon rind until light and fluffy. Spread slice with frosting and top with blueberries. Serve immediately
