A filling and deliciously cheesy breakfast recipe, this cheese omelette with texan baked beans is a great comfort food. Perfect for weekend breakfasts when you need a hearty start to the day.

Cheese Omelette with Texan Baked Beans
Ingredients:
Method:
  1. Whisk eggs with milk in a small bowl until combined. Season with salt and pepper
  2. Heat butter in a medium frying pan over medium-high heat until melted and bubbling. Pour eggs into pan and swirl so the eggs cover the base
  3. Using a wooden spoon, drag cooked egg from the outer edge into centre. Tip pan so uncooked egg flows into the gaps and hits the base of frypan
  4. Once egg is almost all cooked on one side, sprinkle half of the omelette with cheese and top with baked beans and BBQ sauce. Fold over the other half of the omelette to enclose. Slide out of the pan onto a serving plate
Tips & Hints:
  • Substitute baked beans for canned spaghetti if desired. For a more substantial meal, fill omelette with tuna or cooked chicken and vegetables.
