  1. Combine the butter, flour, sugar and almonds in a food processor and process until the ingredients are just combined. Gently knead to form a soft dough. Flatten into a disc shape, wrap and chill for 1 hour
  2. Roll the dough on a floured surface to 5-7mm thickness. Use a 7cm round cutter to cut 12 rounds. Place on greased baking trays. Chill for 30 minutes
  3. Bake in a slow oven 150°C for 30-35 minutes. Stand for 10 minutes before placing on a wire rack. Cool
  4. Combine the strawberries and icing sugar in a bowl, cover and microwave on HIGH for 1-2 minutes or until just softened, cool. Spread or pipe the PHILLY onto 6 sable bases then sandwich together. Place onto the serving plates with a spoonful of strawberries and a drizzle of juice. Serve immediately
