Method:
Passionfruit Sauce
  1. Place caster sugar and ½ cup water in a saucepan over low heat and stir to dissolve sugar
  2. Increase the heat to medium-high and simmer for 3 minutes until syrupy
  3. Stir in the passionfruit pulp and simmer gently for 3 minutes
  4. Allow to cool
Eton Mess
  1. In dessert glasses, layer passionfruit sauce with a small handful of meringue kisses, a tablespoon of double cream and banana slices
  2. Repeat the process until glasses are filled. Serve
