An easy recipe to get the kids eating more vegetables, this baked frittata slice makes a good weeknight dinner. Save leftovers for the lunchbox.

Filling Family Frittata
Ingredients:
Method:
  1. Preheat oven to 180°C/ 160° C and spray a large baking dish with olive oil
  2. Place onion and garlic into a saucepan with water and cook for 1-2 minutes, or until softened
  3. Combine onion and garlic mixture with remaining ingredients and mix well. Pour into prepared baking dish and bake for 60-70 minutes
  4. Stand in dish for 5 minutes and slice into 6-8 squares. Serve with a green salad or steamed vegetables
Tips & Hints:
  • To make this recipe as individual frittatas, spoon mixture into large muffin tins and reduce cooking time to 20 minutes - perfect for school lunches.
