Mediterranean Turkey Roulade
  1. Butterfly turkey breast by cutting horizontally almost in half then open out. Place between two sheets of plastic wrap and use a rolling pin to batten out turkey to a 30cm x 30cm square. (Approx 1.5cm thick)
  2. Combine the pasta sauce with the Parmesan and spread over the turkey. Layer prosciutto and basil leaves over the top. Roll the turkey to enclose the filling, then tie firmly with string. Place into a lined roasting pan and brush with oil
  3. Bake in a moderate oven 180°C for 1 hour or until juices run clear when tested. Wrap in foil and stand for 10 minutes
  4. Combine the pan juices with the sherry and stock in a saucepan, bring to the boil and simmer gently for 5 minutes. Blend the cornflour with a little water, add to the gravy, bring to the boil, stirring until thickened
  5. Remove the string from the turkey and slice thickly. Serve immediately with roast potatoes, vegetable salad and gravy
Tips & Hints:
  • Turkey Tips - Remember to order the turkey fillet from your local poultry specialist. The breast fillets are readily available at Christmas time, but not always from the supermarket. A great substitute would be to use 2 large chicken breast fillets together. Allow large joints of meat and poultry sufficient time to thaw prior to Christmas Day. It can take some larger pieces up to 72 hours to thaw properly. This must always be done in the fridge, never on the kitchen bench at room temperature. The microwave oven is also suitable
