:: These are now my most requested cookies by far. They are the perfect comfort cookie, snack cookie, mother’s group cookie, toddler cookie, get well cookie & afternoon tea cookie. I think the secret is the coconut in the mixture, making the final result a lighter, less dense cookie.

Chocolate Chip Cookies
  1. Preheat oven to 190°C (375°F) Line two large cookie trays with baking paper.
  2. Place the butter, sugar & vanilla paste into a bowl then beat with an electric mixer until light & creamy. Add eggs, one by one.
  3. Sift the flour & baking powder together in a separate bowl & add coconut, stir, then add the dry ingredients to the butter mixture. Add chocolate chips & combine.
  4. Spoon dough out with two large tablespoons or by using a spring-loaded ice-cream scoop.
  5. Place onto the trays, leaving gaps between each one. Bake for 8-10 minutes. Remove from the oven & press firmly down with a flat-bottomed glass in order to produce a uniform cookie shape. Place back into the oven for a further 5 minutes, or until golden
  6. brown.
  7. Transfer to cooling rack.
Tips & Hints:
  • Megann's Kitchen Notes :: Make sure that your butter is at true room temperature; otherwise you will end up with a stiff mixture.
