Mexican Beef, Corn and Bean Nachos
Ingredients:
Method:
  1. Preheat oven to 180°C/160°C fan-forced. Heat oil in a large frying pan over medium-high heat. Add onion and garlic. Cook, stirring often, for 3-4 minutes or until softened
  2. Add mince and cook, breaking up any lumps with a wooden spoon, until evenly browned. Stir in taco spice mix, 1/2 cup water, tomatoes, beans and corn. Bring to the boil. Reduce heat and simmer, stirring occasionally, for 12-15 minutes until thick
  3. Arrange corn chips in a large greased shallow ovenproof dish. Top with mince mixture. Sprinkle with cheese. Bake for 10-12 minutes or until cheese melts
  4. Meanwhile, peel and chop avocado. Place into a bowl, add lime juice and season. Mash until smooth. Serve nachos with mashed avocado, tomatoes, sour cream, coriander and lime wedges

This is a fun and easy recipe that takes 45 to 55 minutes depending on your experience and this is a delicious recipe and I will definitely do it again. It makes at least 4 serves and whoever you serve this to will love it.

Enjoyed this recipe. Didn't have corn chips so I cooked up some packet Uncle Bens Mexican Rice which is a little spicy and put on the bottom instead of the corn chips.
