  1. USE ham (1 slice per muffin pan) to line the base and sides of 12 x 1/3 cup capacity lightly greased non-stick muffin pans
  2. DIVIDE the tomatoes, spinach and chorizo between muffin pans
  3. WHISK the PHILLY, eggs, pepper and chives together then carefully pour into the muffin pans
  4. BAKE in a moderate oven 180°C for 15-20 minutes or until set. Cool in pan for 5 minutes before serving
Tips & Hints:
  • These mini frittatas make a perfect weekend breakfast treat too. Ensure that the ham slices are not broken or torn, otherwise use 2 slices per cup.
