Mini Chorizo Frittatas
- USE ham (1 slice per muffin pan) to line the base and sides of 12 x 1/3 cup capacity lightly greased non-stick muffin pans
- DIVIDE the tomatoes, spinach and chorizo between muffin pans
- WHISK the PHILLY, eggs, pepper and chives together then carefully pour into the muffin pans
- BAKE in a moderate oven 180°C for 15-20 minutes or until set. Cool in pan for 5 minutes before serving
Tips & Hints:
- These mini frittatas make a perfect weekend breakfast treat too. Ensure that the ham slices are not broken or torn, otherwise use 2 slices per cup.
