Method:
  1. Pre-heat oven to 180°C on fan forced cooking function. Grease 2 x 12 round-bottomed patty tins
  2. Using a 5-6cm fluted cutter, cut out pastry rounds and press into each mould. Chill in the fridge for a few minutes
  3. Whisk eggs with cream and add salt and pepper
  4. Combine parsley, semi dried tomatoes and cheese and sprinkle evenly over each base of pastry
  5. Carefully pour cream mix into each pastry
  6. Cook for 15 minutes or until golden
  7. Cool on wire rack
